Making fresh tofu with the Soy Wonder machine is easy:
Make 2 litres of fresh hot soymilk.
Dissolve 1 1/2 teaspoon nigari in 1/2cup of water. Add to very hot soymilk.
Let set about 15 minutes to allow tofu curds to form.
Pour tofu slowly through a fine strainer covered with a cheese cloth. Drain thoroughly, pack into conainer and place in refrigerator.
To make tofu we recommend to use Nigari as coagulant. It is made from sea salt and traditionally used in Japan.
